The Ups and Downs of Slimming

This week's result at SW leaves much to be desired. I managed to put on 1lb and, though it could have been worse, it's still disappointing. However, these hormones aren't settling as soon as I'd have liked and they are messing with my journey. Medication is just another bump on the road, or a bit like a car with an elephant in the back. I'll get there, it'll just take me a little longer than planned.

Luckily, I'm not losing weight for anything in particular except my health and appearance. I feel a bit of a fat frump these days and now is the time to change that. Before my weigh in, I decided to sign up for a 10 week countdown which gives me 2 additional weeks free. Thank goodness I did. It has given me the motivation I needed to keep going even though my journey isn't going as expected. It would be all too easy to get disheartened by a gain and a slow initial loss but buying a block means I HAVE to go as it's already paid for. Boost. So I'm hoping it helps me maintain the determination I had when I started a few weeks ago.

Today, I have been fairly good. My daily breakfast or 2 small wholemeal toasts, 3 scrambled eggs (with no milk or butter) and half a tin of spaghetti hoops, followed by a cop of coffee means I've used one of my Healthy Extras and made a start on the dairy extra. I have had 1 cereal bar (3 syns), a light Baby Bell (2 syns) and a syn-free mug shot. More coffees and an Options hot chocolate (2 syns). So far, that's all the syns I've had and I'm allowed 15-20 daily. I also shared an apple with the little hooligan.

My aims for this week are to increase my water intake, do some body magic and limit my daily syns to make sure I get a decent loss this week. I'm bloody determined.

Super Speedy Fried Rice

This was supper from last night. It was amazing, quick and so filling! I will definitely be making this anytime I need a speedy Speed-Food filled meal for us.

Serves 2 hungry adults
Syn Free

2 pork sizzle steaks
2 peppers, finely sliced
6 spring onions, sliced thinly diagonally
3 large mushrooms (or 6 normal sized), halved and sliced
1/2 courgette, cut into matchsticks
1 carrot, cut into matchsticks,
3 cups cooked and cooled rice
1 egg
2 tbsp soy sauce
1 tsp grated ginger
2 cloves garlic

Fry the pork in a couple skooshes of fry light.
Meanwhile, heat stir-fry pan with some fry light over medium high heat. Add all veg, reserving some spring onions. Stir-fry for a couple of minutes, then cover and allow to steam stirring now and then.
Make a well in the centre. Add egg and LEAVE IT until it's almost cooked. Stir with veg, add ginger and garlic and keep moving.
Add soy sauce and mix well, then add rice. Stir until piping hot.
Slice the pork. Spoon rice mix into bowls, top with pork and spring onions.

Since September, a lot has changed. I have become a better housewife. I have been dragged down by depression again. I have sought help for said depression. I'm now on top of the world. And also my housework. For the first time in... well, forever, I'm proud of my home (nearly). There are still some areas requiring attention, but my kitchen is unrecognisable and I'm still tweaking it. But I can use it, and happily do on a regular basis. MiniMe comes through every morning while I make breakfast. She has her banana and milk, I make my breakfast and other food as required and then we retire to the drawing living room with a cup of tea and an Alpen Light bar to watch some TV on the hard drive.

Since the new year is here, I decided to REALLY follow the Slimming World plan and rejoined group yesterday. I've been writing my intake of food and drinks in my new diary from my mother-in-law, and it's really helping me. I am no longer hungry during the day. I am eating more than before, but it's always healthy stuff that will benefit me. I've not had any fruit myself today yet that will change after lunch. I'm enjoying making soup every couple of days and preparing healthy meals for my family every day or so, depending how much time I know I'm going to have. Last nights quick supper was super speedy and very filling. I'll post a recipe and photo soon, if I can remember how to do that.

Right now, I have a cheeky monkey trying to write her own bit on the blog. She's cute, but not very helpful.
